Turnip, Kiwi & Pomegranate Salad

Preparation time: 5 minutes

Overall time: 20 minutes

Serves: 2 to 4 people

Recipe Ingredients:

Dressing:

· 4 tbsp. of champagne vinegar

· 2 tbsp. of honey

· ½ tsp. of salt

· 1/8 tsp. of pepper

· 2 tbsp. of extra virgin olive oil

Salad:

· 4 turnips, peeled

· 4 kiwis, peeled

· 2 cups of arugula

· ½ cup of pomegranate seeds

Cooking Instructions:

1. Whisk the vinegar, honey, salt and pepper in a small bowl. When the honey is fully incorporated, whisk in the extra virgin olive oil and set aside.

2. Slice the turnips and kiwi thinly with a mandolin or a knife. In a medium bowl, combine the turnips, kiwi, and the dressing and toss carefully.

3. Leave for about 15 minutes and stack the turnips and kiwi on a plate. Do not discard the dressing.

4. Toss the arugula in any dressing left in the bowl. Add the arugula. If you make it into a soft ball in the palm of your hand it is easier to stack.

5. Sprinkle on the pomegranate seeds and serve
